I have deeply missed alfredo sauce. It is one of those foods that is unforgettable! When I went on my first date with my husband, he made me Fetucchini Alfredo from scratch! There he was, this tall strong man at his stove, stirring together this sexy sauce…I was hooked! Of course, I married him! It was spectacular and it became one of my favorite dishes. But lo and behold, I developed a severe allergic reaction to dairy- so I have been working on recreating a light, delicious and dairy free version. Let me tell you folks, this vegan alfredo sauce is easy, delicious and I know you will love it! Let me show you how quickly you can make it.

What you need to make 5-Minute Dreamy Vegan Alfredo Sauce:
- raw cashews
- coconut water (unpasteurized is best,it has a sweeter flavor)
- fresh lemon juice
- fresh garlic
- salt.
Just add these ingredients to a high speed blender or food processor and blend until your sauce is smooth and creamy. I check this after 20 seconds to make sure all the cashews are blended.
If you do not have a high speed blender, you can always quick soak the cashews in hot water for 15-20 minutes to soften them. Just drain out the liquid before sticking them in the food processor with the remaining ingredients and blend until smooth and creamy.
Now, you will have this Dreamy Vegan Alfredo Sauce. It is light, slightly sweet, a bit spicy from the garlic and just the right amount of salt to bring all the flavors together.
How To Serve Dreamy Vegan Alfredo Sauce:
- You can serve this cold or warm.
- To serve cold, just pour it straight out of the blender over zucchini noodles
- To serve warm, pour “vegan alfredo sauce” into a saucepan and heat on low. Do not overheat because the sauce will thicken quickly. Serve over zucchini noodles immediately.
How To Store Dreamy Vegan Alfredo Sauce:
- Simply pour into a sealed container and keep in the fridge
- Use within 3-5 days.
- Keep in the coldest part of your fridge
If you are wondering what kitchen equipment I use to make this Dreamy Vegan Alfredo Sauce, I used a Vitamix which I absolutely love because this took only 30 seconds to blend!
Also, I used a spiralizer on the smallest noodle size to make the zoodles, which took me less than a minute and this recipe was seriously done in 5 minutes!
It is super healthy and a super fast recipe!
Tips for Making the Best Zoodles:
I suggest you use 1 large zucchini per person. FYI, the wider zucchinis will make longer noodles. If you use a skinny zucchini, you will get several short strips if you are using a spiralizer. Trust me on this one, I have done this so many times and I am sticking with the wider zucchinis!
If you want to add nutmeg to your sauce, that will be a nice touch too!
I used this sauce on gluten free macaroni pasta and added a bit of nutritional yeast and cayenne pepper to spruce it up to my liking, but that is another recipe to work on!
I started a meatless Monday at home and zucchini noodles are served for dinner on a regular basis. My daughter now loves these Zoodles with vegan alfredo sauce!
To Make this kid friendly:
- Add only 1 small garlic clove to the recipe
- Be sure to warm the sauce on low and toss the zucchini noodles into the Dreamy Vegan Alfredo sauce before serving

Ingredients
- 1 cup young Thai coconut water (best if unpasteurized)
- 1–2 garlic cloves, peeled
- 1 1/4 cup whole raw cashews
- 5 Tablespoons fresh lemon juice (1 lemon)
- 1 teaspoon salt
- For serving: Zoodles and cherry tomatoes {1 zucchini per person topped with 5 cherry tomatoes sliced}
Instructions
- In a high speed blender or food processor, blend together coconut water, garlic cloves, cashews, lemon juice and salt. Blend on high until smooth and creamy.
- Place Zoodles onto a dinner plate, top with sliced cherry tomatoes and top off with Dreamy Vegan Alfredo sauce. Enjoy!
