5-Minute Dreamy Vegan Alfredo Sauce with Zucchini Noodles (Zoodles)

Ingredients
1 cup young Thai coconut water (best if unpasteurized)
1-2 garlic cloves, peeled
1 1/4 cup whole raw cashews
5 Tablespoons fresh lemon juice (1 lemon)
1 teaspoon salt
For serving: Zoodles and cherry tomatoes {1 zucchini per person topped with 5 cherry tomatoes sliced}
Instructions
In a high speed blender or food processor, blend together coconut water, garlic cloves, cashews, lemon juice and salt. Blend on high until smooth and creamy.
Place Zoodles onto a dinner plate, top with sliced cherry tomatoes and top off with Dreamy Vegan Alfredo sauce. Enjoy!
