Ingredients
Scale
- 2 dozen okras
- 1 whole egg, beaten
- 2/3 cup blanched almond flour
- 1/3 cup tapioca flour
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground pepper
- 3/4 teaspoon salt (Himalayan)
- 1/4 cup oil (avocado or olive)
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Rinse okra and place in a bowl with beaten egg. Coat well with egg.
- In a separate bowl, whisk together almond flour, tapioca flour, paprika, garlic powder, onion powder, pepper and salt.
- Get a large baking sheet, cover with parchment paper and brush with some of the oil.
- Coat okra in almond flour mixture and add to baking sheet. I coat 4-5 at a time. Repeat with remaining okra.
- Brush remaining oil over each okra piece. I use a silicone basting brush for this.
- Bake for 40 minutes or until golden brown in oven at 400 degrees. The bottom will be more golden than the top. Watch okra to make sure they do not burn. Allow to cool 5 minutes before serving.
