The strong summer heat always has me craving refreshing, light dishes like my Lazy Guacamole. It is a super quick, summer salad made in 5 minutes!
This Lazy Guacamole was inspired by one of my favorite healthy restaurants in Pasadena called Lemonade. Lemonade is a buffet line style restaurant where they have fresh salads and delicious main courses. They even label their dishes with a symbols which lets you know if an item is gluten free, contains dairy, contains nuts or contains protein. Everything there tastes fabulous! If you are ever in Los Angeles, I highly recommend this place! You will NOT be disappointed!
One of my favorite side salads at Lemonade is their avocado, cherry tomato and pine nut salad. I made mine as simple as possible, left out the pine nuts and decided to call it a Lazy Guacamole because, well…that is what it reminds me of! Just chop and toss! So simple!
This is a great recipe if you need a quick salad for last minute guests or if you need to use up ripe avocados or tomatoes from your garden!

How to Make Lazy Guacamole Salad:
What I love most about this guacamole salad is it only takes 4 ingredients to make: avocado, tomatoes, lemon juice and salt. It uses fresh, summer ingredients and resembles a restaurant quality dish!
When picking out the perfectly ripe avocado try this: place the avocado in your hand and gently squeeze. If the avocado is hard then it is not ripe and not ready to eat. If the avocado has a bit of “give” and can be lightly squeezed then it is ripe and ready for eating! Don’t poke the avocado, as it can bruise easily.
Start by peeling avocados and removing the pits. Cube and place in a bowl.
Slice cherry or grape tomatoes in half and add to the bowl of avocados. Quarter larger sized tomatoes.
Gently drizzle fresh lemon juice over the tomato and avocado mixture. Sprinkle with salt to your liking.
The lemon in this dish adds to the refreshing taste and helps to keep the avocado from discoloring before enjoying!
Gently toss the salad together, carefully. Taste and adjust salt seasoning as needed. Serve immediately!
Tip: This can be served over Cast Iron Grilled Chicken, Gluten Free Beer Battered Fish Tacos or just as a side salad!

Description

Ingredients
- 2 avocados
- 1 dozen grape or cherry tomatoes
- 1 Tablespoon fresh lemon juice
- Salt to taste
Instructions
- Peel avocados, remove pits and cube. Place in a small bowl.
- Slice tomatoes in half and add to bowl.
- Drizzle lemon juice over mixture and sprinkle with salt.
- Gently stir with a rubber spatula and adjust salt to taste. Serve immediately.
