No-Bake Dark Chocolate Strawberry Energy Bites-grab-n-go clean eating recipe full of delicious dark chocolate, protein and fruit. Vegan & gluten free.
These No-Bake Dark Chocolate Strawberry Energy Bites are very easy to make and perfect for being on the run! They are so good that kids won’t even know they are dairy free and healthy! They actually taste like real truffles, we have had several kids come over this week and ask for more and more…and more! If you are on the run going from one kids activity to the other as we are, then these are the perfect protein snack to pop into your mouth before heading out the door!

No-Bake Dark Chocolate Strawberry Energy Bite Ingredients:
- dairy free dark chocolate chips
- protein powder-I like this Brand due to its delicious flavor. I use the one with sprouted brown rice, making it easier to digest, I sometimes use their green powder for these energy bites, my kids don’t even know the difference 🙂 They have grain free flavors too!
- freeze dried strawberries
- cashew butter
- maple syrup
- fig balsamic, gives a flavor boost but if you don’t have it, you can leave it out
How to Make No-Bake Dark Chocolate Strawberry Energy Bites:
- Melt chocolate chips on low flame, stirring occasionally with a rubber spatula for about 2-3 minutes until smooth and creamy.
- Puree freeze dried strawberries in the food processor until they are fully powdered.
- Mix together melted dark chocolate, powdered freeze dried strawberries, protein powder, cashew butter, maple syrup and fig balsamic in a large mixing bowl. I mix the energy bite batter in a kitchen aid mixer but a hand mixer or simply your hands will work too.
- Use a small-sized cookie scoop to scoop out batter and roll between hands to form balls. Repeat with remaining energy bite dough. My dough is more on the dry side so I soften it between my hands. If your dough is way too dry, just add equal amounts of cashew butter and maple syrup to soften. This varies due to the consistency of the cashew butter.
- This recipe will make about 20 energy bites. Put on a cookie sheet covered in parchment paper in the fridge until energy bites are hard, approximately 20 minutes.
Be sure to place 2-3 energy bites into a snack size zip-lock bag and put in your snack bin, that way you can just grab it on the go. A great thing about this recipe is that it is rich in protein. Getting enough protein into my kids diet has been a challenge, I have gone through many different protein powders until I found this delicious plant based one! It tastes great! I personally have tons of energy after using it! Also, since it uses brown rice protein that is sprouted, my body responds just fine to it. Sprouted brown rice is much easier to digest since it has been broken down. They have grain free varieties too!
I use this protein powder in smoothies and now in these No-Bake Dark Chocolate Energy Bites! Next, I will work on some protein bars-similar to my Strawberry Bars!
One idea I have for these No-Bake Dark Chocolate Strawberry Energy Bites is to dip them in melted dark chocolate and then in coconut flakes-that would be amazing! I will share that in recipe 2.0 with a different flavor! I am thinking raspberry! Yum!

Ingredients
- 9 ounce package Dark Chocolate Chocolate Chips (Dairy Free)
- 1 ounce freeze dried strawberries
- 1/4 cup favorite protein powder (I use strawberry or a light flavored green power)
- 1/2 cup cashew butter
- 6 Tablespoons maple syrup
- 1 teaspoon fig balsamic
Instructions
- Melt chocolate chips on low flame, stirring occasionally about 2-3 minutes until smooth and creamy.
- Puree freeze dried strawberries in the food processor until they are fully powdered.
- Mix together melted chocolate, powdered freeze dried strawberries, protein powder, cashew butter, maple syrup and fig balsamic. Mix with a kitchen aid or hand mixer.
- Use a mini cookie scoop to scoop out energy bite dough and roll between hands to form balls. My dough is more on the dry side and I soften between my hands. (If your dough is too dry, add equal amounts of cashew butter and maple syrup to soften).
- Roll into 20 balls and put on a cookie sheet covered in wax or parchment paper in the fridge until energy bites are hard, approximately 20 minutes. Store in an airtight container in the fridge. Enjoy!
