How do you Make No-Churn Vegan Ice Cream?
Making No-Churn Vegan Blueberry Acai Ice Cream is much easier than you think! It is all about creating a good base.
I use a base of full fat coconut milk or coconut cream, maple syrup and xanthan gum.
Xanthan gum helps thicken and emulsify the ingredients. If you would like to avoid xanthan gum, then you can use a ripe banana or cashew cream as a part of your base.
Next, add your flavor enhancers to your blender, I am using fresh blueberries, acai and vanilla.
Then, blend all ingredients in the blender until smooth and creamy and pour into a container to freeze.
A loaf pan covered with foil or sealed container works.
How long does it take to make No-Churn Vegan Ice Cream?
To prep the vegan ice cream, is very little time-approximately 5 minutes.
The freezing time is personal preference for texture.
If you prefer a soft serve, freeze for 4-5 hours, for a firm ice cream, then 5-6 hours.
You can simplify things by just letting the ice cream freeze overnight. Allow your ice cream to thaw for 5-10 minutes before serving.

This is because fruit is harvested at the peak of it’s season. It is the time of year when the fruit not only holds the best flavor, but the most nutrition.

No-Churn Vegan Blueberry Acai Ice Cream-a fruity homemade ice cream bursting with fresh blueberries, acai and coconut. This easy dairy free ice cream is the perfect whole fruit summer ice cream. A healthier twist on ice cream!
- Prep Time: 5 mins plus freezing
- Total Time: 5 mins plus freezing
- Yield: 8 servings 1x
- 1 pint fresh blueberries
- 1 packet frozen acai
- 1 can full fat coconut milk or coconut cream (13.66 ounces)
- 1 teaspoon xanthan gum
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- Add all ingredients to a blender. Blend until smooth and creamy.
- Pour ingredients into a loaf pan or container and cover with foil or lid. Freeze until firm. Freeze for 4-5 hours for soft serve and 5-6 hours for firmer ice cream. Thaw for 5-10 minutes before serving.
