Paleo Cashew Yogurt Parfait {Vegan}

  1. Place 1/2 cup of vegan yogurt at the bottom of a parfait cup.
  2. Sprinkle 1/4 teaspoon chia seeds, 1/2 teaspoon of pumpkin seeds and 1/2 cup of mixed berries with pomegranate seeds.
  3. Layer remaining 1/4 cup of yogurt, 1/4 teaspoon chia seeds, 1/3 cup mixed berries & pomegranate seeds and sprinkle pumpkin seeds on top.
  4. Serve immediately.

Notes

Feel free to use any mixture of your favorite fruit in this recipe. Mango and strawberries go really well too!
