Cowboy Chili


Cowboy Chili stuffed into a delicious sweet potato and topped with dairy free sour cream. This is surely a hearty and satisfying meal. You will fall in love with the combination of chocolatey Cowboy Chili, the sweetness of the sweet potato and the creaminess of dairy free sour cream.


  • 1.63 lbs flank steak, cubed
  • 2 tablespoons avocado oil
  • 1 onion chopped
  • 2 carrots chopped
  • 1 can diced tomatoes
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons chili powder
  • 1 Tablespoon molasses
  • 1 Tablespoon honey
  • 1 teaspoon garlic powder
  • 1 ounce unsweetened chocolate
  • 1/2 cup chicken stock
  • 1 teaspoon salt (more to taste)


  1. Turn Instant Pot to saute mode. Add onions and saute 2-3 minutes
  2. Add meat and sauté for 3 minutes.
  3. Add remaining ingredients, cover with lid and put on high pressure for 40 minutes.
  4. Allow to slowly release pressure and taste for desired seasonings.
  5. Cut a sweet potato in half and top with cowboy chili and dairy free sour cream.
