- 1.63 lbs flank steak, cubed
- 2 tablespoons avocado oil
- 1 onion chopped
- 2 carrots chopped
- 1 can diced tomatoes
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 2 teaspoons chili powder
- 1 Tablespoon molasses
- 1 Tablespoon honey
- 1 teaspoon garlic powder
- 1 ounce unsweetened chocolate
- 1/2 cup chicken stock
- 1 teaspoon salt (more to taste)
Instructions
- Turn Instant Pot to saute mode. Add onions and saute 2-3 minutes
- Add meat and sauté for 3 minutes.
- Add remaining ingredients, cover with lid and put on high pressure for 40 minutes.
- Allow to slowly release pressure and taste for desired seasonings.
- Cut a sweet potato in half and top with cowboy chili and dairy free sour cream.
